When I was a wee little one, I remember my dad coming in from an afternoon tending to his garden and popping open a can of sardines for lunch. Curious about these little guys, I was not. Usually his offer to share a bite was met with a prompt and firm “ewwwww, no.”

It’s taken me 30 years to question why these cans of conveniently packed, flavorful little fiddies get such a bum rap. I don’t think twice when cranking a can of tuna open to save the day when I have nothing in the fridge for lunch. I recently read an article by Nicholas Day on Food52 speaking the praises of sardines — in his case because it conveniently saves dinner in a pinch for his own children. He feeds his kids sardines? This made me take pause. Well why not.

And then I was contacted by BELA Sardines to see if their cans of fresh-packed {within 8 hours of being caught and never frozen} Portuguese sardines would be something we would be interested in selling in the Food52 shop. We popped a few cans open at the office, broke out the crackers and started snacking. They were good — really, really good. Each is slightly smoked and packed in either Portuguese extra virgin olive oil or tomato sauce {4 flavors to choose from}. Beyond just the flavor, there are other reasons to love these little guys — they’re low-mercury, sustainably caught, and full of healthy fats. They are a pantry staple everyone should pile high.

I’m a convert. To be perfectly honest, I would be happy opening a can of these, pouring a nice glass of wine and calling that alone a mid-week meal. But it doesn’t take much to use them in a slightly more creative way, with still minimal effort, and have a dish to be proud of. Go ahead, give sardines a chance — you may be surprised by a new love.

Do This!: Celebrate Julia Child’s 100th Birthday

Culinary icon Julia Child would have turned 100 years old on August 15th of this year. To honor her, I will be celebrating her legacy through JC100 {100 days of Julia} a national campaign involving restaurants, chefs, bookstores, and bloggers.

For Julia, a simple lunch of sole meunière — her first meal in Paris — was life changing and inspired her 40-year love affair with food and the start of a cooking revolution in America.

I’ll be preparing a number of her favorite and most beloved dishes and sharing them with you — I hope this encourages everyone to channel their inner Juuuuuuuulia and dirty up your kitchens, no matter how small they may be.

Scrapple Omelet

Scrapple what? This is a clear case of “I know a guy.” I was hanging out at the greenmarket with Keith from Grazin’ Angus Acres last week and he pulled out this special treat to share. What is it? What do I do with it?

Locally called “everything but the oink,” scrapple is typically made of hog offal, such as the head, heart, liver, and other scraps, which are boiled with any bones attached to make a broth. Once cooked, bones and fat are discarded, the meat is reserved, and  cornmeal is boiled in the broth to make a mush. The meat, finely minced, is returned to the pot and seasonings, typically sage, thyme, savory, black pepper, and others, are added. The mush is formed into loaves and allowed to cool thoroughly until set.

Scrapple

With my know-thy-farmer treasure in hand, I marched home, pulled out a pan, cut a few 1/4-inch slices and pan fried the scrapple until it formed a lovely crust. The result? Better than bacon! It’s crispy, salty, meaty — exactly the partner you want for your eggs. If you can manage to find some scrapple from a local farmer or friendly butcher, I highly recommend giving it a try — this puts Jimmy Dean to shame.

Know-Thy-Farmer Scrapple Omelet

Individual serving

2-3 1/4-inch slices of scrapple
olive oil
2 eggs
salt and pepper to taste
chives or parsley for garnishing

  1. Cut 2-3 1/4-inch slices of scrapple and add them to a warm pan with a drizzle of olive oil. Leave whole or break up into smaller pieces, but continue to turn, getting both sides crispy.
  2. Whisk two eggs with salt and pepper and add to the pan once the scrapple is crisp.
  3. Using a rubber spatula, create small holes in the middle of the omelet to let the liquid go to the bottom to cook.
  4. Once the egg starts to firm, flip the omelet by sliding onto a plate and turning over back into the pan.
  5. Cook until both sides are cooked through and then serve with a sprinkle of maldon salt and fresh herbs.

Recipe Inspiration: Happy 4th of July!

Well we all know how I feel about BBQs — any excuse to play with food and fire is a good time to me. It’s easy to throw a few burgers on the grill and crack a few cold ones, but there is no reason you can’t jazz up a 4th of July BBQ and still keep it easy and relaxed. Memorial Day Menu

The forecast is 75 and sunny — do I need to knock on wood? I hope everyone is gearing up for a fun Memorial Day weekend. It’s one of my favorite holidays because it kicks off everything good about Summer — outdoor grilling, cold beers and late night BBQ parties. Every year I host a little rooftop shindig for friends — sometimes it’s all about the slow-roasted ribs, but this year I think I’m doing BBQ’d pizzas. They are so easy and great to do when you’re hosting a lot of people. Just line up the ingredients and let people get creative. This is also less work for the party host, leaving more time for sipping suds. Here are some of my favorite BBQ menu items — I hope this inspires some great backyard bashes. Happy Memorial Day!

Do This!: Support Japan Relief Through Keeprecipes

I love Japan — in fact it is one of my top 3 favorite travel destinations of all time. So when I heard about this support initiative that was organized and launched by a friend of mine that combines raising money for relief efforts with good food, I had to share with all of you. I hope you take the time to read and consider making a donation in exchange for some amazing Japanese-inspired recipes.

Some of the world’s most esteemed culinary masters, including Iron Chef Masaharu Morimoto, Michelin Star Chef Anito Lo, and Madonna’s personal chef Mayumi Nishimura, have teamed up with KeepRecipes.com to provide Japan-inspired recipes to help the American Red Cross with their relief efforts in Japan.  The website www.donate.keeprecipes.com provides donors with a digital cookbook with 21 Japan-inspired recipes from an esteemed list of top chefs for any donation made of $10 or more.

With more than 530,000 citizens relocated, 73,000 homes destroyed, and a death toll that now tops 10,000, the estimation for reconstruction is expected to top $300 billion and take over five years.

Recipes are featured from culinary icons like Iron Chef Masaharu Morimoto’s (Braised Black Cod), Madonna’s long time personal macrobiotic chef Mayumi Nishimura (Wakame Soup with Snow Peas and Ginger), New York Times columnist and Best Selling author Mark Bittman (Baked Mushroom-Sesame Rice Balls) and “Breakaway Cook” author Eric Gower.  KeepRecipes will donate $0.86 cents for every dollar of revenue generated through the sale of the “KeepRecipes for Recovery” digital cookbook sold from April 6th until June 30th to the American Red Cross.  On the site, there will also be photos of final dishes, chef information, and tips that are helpful when grocery shopping and cooking.

Charitable giving, delicious recipes — that’s something I can get behind!
